Why Put A 15° Edge On My Knives?Generally, the sharper the edge the easier it is to cut, but also the easier it is for the knife to dull. We'll set the edge on your newly sharpened knife to 15°, which is razor-sharp and will hold well with proper care. Most European and Japanese knives come from the factory with a 15°- 20° edge.

How Often Should I Have My Knives Sharpened?A guideline for most home cooks would be to have your knives professionally sharpened once a year. You can keep your sharp knives sharper for longer with just a bit of care. Hand wash and dry your knives immediately after every use. Avoid the dishwasher. Only cut on softwood or plastic cutting boards. Avoid hard materials like glass and granite. Store your knives in a table-top or in-drawer knife block or magnetic knife holder - and not loose in a drawer. Regularly use a honing steel to keep your knife edge straight. Our own experience is that frequent use of honing steel is the real secret to extending your knife's sharp edge. Our suggestion is to give your knife a quick flick on both sides of the steel every other time you take it out to use it. If you don't have a steel you can purchase a quality Wüsthof 9" honing steel on our website and we will deliver it free and even show you how to use it properly.

Doesn't My Honing Steel Sharpen My Knives?No it doesn't. Sharpening involves using a grindstone to remove a small amount of steel from the knife to put a new sharp edge on the blade, while a honing steel simply helps to keep the new sharp edge straight. Regular use of a honing steel will certainly help to keep your sharp knife sharp, but it doesn't actually do the job of sharpening.

What If My Knife Is Knicked Or Damaged?We can easily grind out small knicks and reshape the blade. More severe damage may be an issue. If you have a concern, just send us a digital image of the damaged knife and we can discuss options.

Do You Really Offer Same-Day Pickup & Return?Yes we do for customers in the St. John's metro area. Get in touch and we will set a convenient day and time for pickup and return. And we charge at the door (cash or e-transfer) after your knives are done.

Do You Sharpen Scissors?Yes, we sharpen all sorts of kitchen and fabric scissors. Unfortunately we do not sharpen hair cutting scissors as these require specialized equipment.

Who is 'A Sharp Knife'Hi there! My name is Laurie Clouston, and welcome to A Sharp Knife. This little business is my "retirement project" after living and working in St. John's all my life. Cooking has always been something that I enjoy, and I've always appreciated using sharp knives when I cook. So I thought, "If I love cooking with sharp knives, there must be others out there who feel the same way!" That's when the idea for A Sharp Knife was born. I decided to invest in professional-grade equipment, hone my skills by sharpening for friends and family (they were happy guinea pigs!), and build up the skill to take this idea public. Building this service from scratch has been an incredibly rewarding experience. Thank you to all my early customers for your incredible trust and support (and for all those 5-star reviews)!
